Ingredients

  • 1 lb chicken breast or thighs, diced
  • 4 cups chicken broth
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bay leaf
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • Salt and pepper to taste
  • Optional: 1 cup egg noodles or rice, chopped fresh parsley for garnish

Instructions

  • In a large pot, sauté the onion and garlic until softened.
  • Add the diced chicken and cook until browned on all sides.
  • Add the carrots, celery, chicken broth, bay leaf, thyme, and parsley.
  • Bring to a boil, then reduce heat and simmer for 20-25 minutes until the vegetables are tender.
  • Season with salt and pepper to taste.
  • If adding noodles or rice, cook separately and add in the last 5 minutes of cooking.
  • Remove the bay leaf and serve hot, garnished with fresh parsley if desired.
