Ingredients
- 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
- 2 tbsp olive oil
- 2 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp chili powder
- 1/2 tsp paprika
- 1/2 tsp dried oregano
- Salt and pepper, to taste
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- Small corn tortillas
- Toppings: diced onions, chopped cilantro, sliced radishes, crumbled queso fresco, lime wedges
Instructions
- In a bowl, combine the chicken pieces with olive oil, minced garlic, ground cumin, chili powder, paprika, dried oregano, salt, and pepper. Mix well to coat the chicken evenly.
- Allow the chicken to marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
- Heat a skillet or grill pan over medium-high heat. Once hot, add the marinated chicken pieces and cook for 4-5 minutes on each side or until fully cooked through.
- Once the chicken is cooked, remove it from heat and sprinkle with chopped cilantro and fresh lime juice.
- Warm the corn tortillas on a skillet or directly over a gas flame until they are pliable.
- To assemble, spoon a portion of the chicken onto each tortilla. Top with your preferred toppings and serve immediately.
