Description

Ingredients

  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp dried oregano
  • Salt and pepper, to taste
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Small corn tortillas
  • Toppings: diced onions, chopped cilantro, sliced radishes, crumbled queso fresco, lime wedges

Instructions

  1. In a bowl, combine the chicken pieces with olive oil, minced garlic, ground cumin, chili powder, paprika, dried oregano, salt, and pepper. Mix well to coat the chicken evenly.
  2. Allow the chicken to marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
  3. Heat a skillet or grill pan over medium-high heat. Once hot, add the marinated chicken pieces and cook for 4-5 minutes on each side or until fully cooked through.
  4. Once the chicken is cooked, remove it from heat and sprinkle with chopped cilantro and fresh lime juice.
  5. Warm the corn tortillas on a skillet or directly over a gas flame until they are pliable.
