Ingredients
- 2 cups cooked chicken, shredded
- 2 cups cooked wild rice
- 1 cup sliced mushrooms
- 1 cup chopped celery
- 1 cup chopped onion
- 1 can (10.5 oz) condensed cream of mushroom soup
- 1 cup chicken broth
- 1 cup sour cream
- 1/2 cup shredded Swiss cheese
- 1/4 cup slivered almonds
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium heat. Add sliced mushrooms, chopped celery, and chopped onion. Cook until vegetables are tender.
- In a large bowl, combine cooked chicken, cooked wild rice, sautéed vegetables, condensed cream of mushroom soup, chicken broth, sour cream, shredded Swiss cheese, and slivered almonds. Mix until well combined.
- Transfer the mixture to a greased 9x13-inch baking dish.
- Bake in the preheated oven for 30-35 minutes, until the top is golden brown and the casserole is bubbly.
- Let cool slightly before serving.
