Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1/4 cup all-purpose flour
  • 2 tbsp olive oil
  • 1/4 cup chicken broth
  • 1/4 cup lemon juice (about 2 lemons)
  • 2 tbsp capers, drained
  • 3 cloves garlic, minced
  • 2 tbsp unsalted butter
  • 1 tbsp fresh parsley, chopped (for garnish)
  • Lemon slices (for garnish)

Instructions

  • Season chicken breasts with salt and pepper. Dredge in flour, shaking off excess.
  • Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and cook for 4-5 minutes per side, until golden brown and cooked through. Remove from skillet and set aside.
  • In the same skillet, add garlic and sauté for 1 minute until fragrant.
  • Add chicken broth, lemon juice, and capers. Stir to combine and bring to a simmer.
  • Reduce heat to low and stir in butter until melted and the sauce is smooth.
  • Return chicken breasts to the skillet, spooning sauce over the top. Simmer for 2-3 minutes until heated through.
  • Garnish with fresh parsley and lemon slices before serving.
