Ingredients
- Banana Pudding:
- 1 (3.4 oz) package instant vanilla pudding mix
- 2 cups cold milk
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 2 large bananas, sliced
- Chocolate Coating:
- 2 cups semi-sweet chocolate chips
- 1 tbsp coconut oil (optional)
- Extras:
- 12 vanilla wafer cookies, crushed
- Whipped cream (optional, for topping)
Instructions
- Prepare Banana Pudding: In a bowl, whisk the pudding mix and milk for 2 minutes until thickened. In a separate bowl, whip the heavy cream and powdered sugar until stiff peaks form. Fold the whipped cream into the pudding mixture.
- Assemble the Cups: Layer pudding, banana slices, and crushed vanilla wafers into small cups or jars. Repeat layers as desired.
- Make Chocolate Coating: Melt the chocolate chips and coconut oil (if using) in the microwave in 30-second intervals, stirring until smooth.
- Top the Cups: Spoon the melted chocolate over each pudding cup to form a layer. Refrigerate for 1 hour, or until the chocolate is set.
- Serve: Top with whipped cream and extra banana slices before serving, if desired.
Notes
- For added texture, mix crushed vanilla wafers into the pudding layers.
- Use dark chocolate chips for a richer flavor, or white chocolate for a sweeter variation.
