Ingredients
- 1 lb boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 cans (15 oz each) white beans, drained and rinsed
- 1 can (4 oz) diced green chilies
- 4 cups chicken broth
- 1 tsp ground cumin
- 1 tsp dried oregano
- 1/2 tsp chili powder
- 1/2 tsp ground coriander
- Salt and pepper to taste
- 1/2 cup sour cream
- 1/4 cup heavy cream
- Fresh cilantro and lime wedges (optional, for garnish)
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and cook until softened, about 5 minutes.
- Add minced garlic and cook for another minute until fragrant.
- Add chicken breasts, chicken broth, green chilies, cumin, oregano, chili powder, coriander, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20-25 minutes until chicken is cooked through.
- Remove the chicken, shred it, and return it to the pot.
- Stir in white beans, sour cream, and heavy cream. Simmer for another 5-10 minutes until heated through.
- Serve hot, garnished with fresh cilantro and lime wedges if desired.
Notes
- For a thicker chili, mash some of the beans before adding them to the pot.
- Adjust the spice level by adding more chili powder or diced jalapeños.
- This chili can be made ahead and reheated; it often tastes even better the next day.
