Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1 can (4 oz) diced green chilies
  • 4 cups chicken broth
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1/2 tsp chili powder
  • 1/2 tsp ground coriander
  • Salt and pepper to taste
  • 1/2 cup sour cream
  • 1/4 cup heavy cream
  • Fresh cilantro and lime wedges (optional, for garnish)

Instructions

  • Heat olive oil in a large pot over medium heat. Add diced onion and cook until softened, about 5 minutes.
  • Add minced garlic and cook for another minute until fragrant.
  • Add chicken breasts, chicken broth, green chilies, cumin, oregano, chili powder, coriander, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20-25 minutes until chicken is cooked through.
  • Remove the chicken, shred it, and return it to the pot.
  • Stir in white beans, sour cream, and heavy cream. Simmer for another 5-10 minutes until heated through.
  • Serve hot, garnished with fresh cilantro and lime wedges if desired.

Notes

  • For a thicker chili, mash some of the beans before adding them to the pot.
  • Adjust the spice level by adding more chili powder or diced jalapeños.
