Description

Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 3 cups old-fashioned rolled oats
  • 1 cup raisins

Instructions

  1. Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth and creamy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon. Gradually add this to the butter mixture and mix until just combined.
  5. Fold in the rolled oats and raisins.
  6. Drop the dough by rounded tablespoons onto the prepared baking sheets.
  7. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers will still look a bit soft.
  8. Remove from the oven and let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Notes

You can add nuts, like walnuts or pecans, for added crunch if desired.
