Description

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp paprika
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/2 cup milk
  • 1 large egg
  • 1 can (15 oz) corn kernels, drained
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • 2 tbsp vegetable oil (for frying)


Instructions

  1. In a large bowl, whisk together flour, cornmeal, baking powder, salt, black pepper, paprika, garlic powder, and onion powder.
  2. In a separate bowl, combine milk and egg, then pour into the dry ingredients and mix until just combined.
  3. Fold in the corn, shredded cheddar cheese, and chopped green onions.
  4. Heat vegetable oil in a large skillet over medium heat.
  5. Drop spoonfuls of the batter into the skillet, flattening slightly with the back of the spoon.
  6. Cook fritters for 2-3 minutes per side, until golden brown and cooked through.
  7. Remove and drain on paper towels.
  8. Serve warm, optionally with sour cream or salsa.

Notes

  • For a spicier version, add finely chopped jalapeños to the batter.
