Ingredients
- 1 cup all-purpose flour
- 1/2 cup cornmeal
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp paprika
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/2 cup milk
- 1 large egg
- 1 can (15 oz) corn kernels, drained
- 1 cup shredded cheddar cheese
- 1/4 cup chopped green onions
- 2 tbsp vegetable oil (for frying)
Instructions
- In a large bowl, whisk together flour, cornmeal, baking powder, salt, black pepper, paprika, garlic powder, and onion powder.
- In a separate bowl, combine milk and egg, then pour into the dry ingredients and mix until just combined.
- Fold in the corn, shredded cheddar cheese, and chopped green onions.
- Heat vegetable oil in a large skillet over medium heat.
- Drop spoonfuls of the batter into the skillet, flattening slightly with the back of the spoon.
- Cook fritters for 2-3 minutes per side, until golden brown and cooked through.
- Remove and drain on paper towels.
- Serve warm, optionally with sour cream or salsa.
Notes
- For a spicier version, add finely chopped jalapeños to the batter.
- Use fresh corn when in season for the best flavor.
