Ingredients

8 oz pasta (penne or fusilli)

1 cup cottage cheese

2 cloves garlic, minced

2 tbsp olive oil

1/4 cup grated Parmesan cheese

1/2 tsp chili flakes (optional)

Salt and black pepper to taste

Fresh basil or parsley for garnish


Instructions

Cook pasta according to package instructions until al dente. Reserve 1/2 cup pasta water and drain.

In a skillet, heat olive oil and sauté garlic until fragrant.

In a blender, combine cottage cheese, sautéed garlic, salt, pepper, and a bit of pasta water. Blend until smooth.

Return pasta to the pot, pour in the cottage cheese sauce, and toss to coat evenly.

Stir in Parmesan cheese and adjust consistency with more pasta water if needed.

Top with chili flakes and herbs before serving.
