Ingredients

For the Pork Chops:

  • 4 bone-in pork chops
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon cayenne pepper (optional)
  • 2 eggs
  • 2 tablespoons milk
  • Vegetable oil (for frying)

For the Bacon Gravy:

  • 4 slices bacon, chopped
  • 2 tablespoons bacon drippings
  • 2 tablespoons all-purpose flour
  • 1 ½ cups milk
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions

  • Prepare the Pork Chops: Pat pork chops dry. In one bowl, mix flour, salt, pepper, garlic powder, paprika, and cayenne. In another bowl, whisk eggs and milk.
  • Dredge & Fry: Dip each pork chop in the flour mixture, then in the egg mixture, then back in the flour. Heat oil in a skillet over medium-high heat and fry pork chops for 4-5 minutes per side until golden brown. Drain on paper towels.
  • Make the Bacon Gravy: In the same skillet, cook bacon until crispy. Remove and set aside, leaving 2 tablespoons of drippings. Stir in flour and cook for 1 minute. Slowly whisk in milk, then season with salt and pepper. Simmer until thickened.
  • Serve: Pour bacon gravy over fried pork chops and garnish with crispy bacon pieces. Enjoy!
