Description

Ingredients

  • 1 lb fresh green beans, trimmed
  • 1 lb baby potatoes, halved
  • 6 slices bacon, cooked and crumbled
  • 2 tbsp olive oil
  • 1 packet ranch seasoning mix (about 1 oz)
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1/4 cup grated parmesan cheese (optional)
  • Fresh parsley for garnish (optional)

Instructions

  • Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  • Toss the halved potatoes with olive oil, garlic powder, ranch seasoning, salt, and pepper. Spread them in a single layer on the baking sheet and roast for 20 minutes.
  • Meanwhile, blanch the green beans in boiling water for 3-4 minutes until tender-crisp. Drain and set aside.
  • After 20 minutes, add the green beans and crumbled bacon to the potatoes on the baking sheet. Toss everything together and roast for an additional 10-15 minutes until the potatoes are golden and the green beans are slightly crisp.
  • Remove from the oven and, if desired, sprinkle with parmesan cheese and fresh parsley. Serve hot.

Notes

  • For a richer flavor, use thick-cut bacon and reserve a bit of the bacon grease to toss with the vegetables.
  • You can also substitute frozen green beans; just thaw and pat them dry before roasting.
