Ingredients

12 oz linguine

1 lb boneless, skinless chicken breast, diced

Salt and pepper to taste

2 tbsp olive oil

6 tbsp unsalted butter

4 garlic cloves, minced

1 tsp Dijon mustard

1/2 tsp smoked paprika

1/4 tsp crushed red pepper flakes (optional)

Zest and juice of 1 lemon

1 tbsp fresh parsley, chopped

1 tbsp chives, chopped

1/2 cup grated Parmesan cheese

1/4 cup pasta water (reserved)


Instructions

  1. Cook linguine according to package directions. Reserve 1/4 cup pasta water and drain.
  2. Season diced chicken with salt and pepper. In a skillet over medium heat, cook chicken in olive oil until browned and cooked through. Remove and set aside.
  3. In the same skillet, melt butter. Add garlic, mustard, paprika, and red pepper flakes. Stir until fragrant.
  4. Stir in lemon zest and juice, then add parsley and chives.
  5. Return chicken to the skillet, add cooked linguine, and toss to coat.
  6. Add Parmesan cheese and reserved pasta water as needed to create a creamy sauce.
  7. Serve warm, garnished with extra herbs and Parmesan if desired.

Notes

Adjust red pepper flakes to control heat.

Substitute chicken with shrimp for a seafood variation.

Great with a side of crusty bread or salad.
