Ingredients
12 oz linguine
1 lb boneless, skinless chicken breast, diced
Salt and pepper to taste
2 tbsp olive oil
6 tbsp unsalted butter
4 garlic cloves, minced
1 tsp Dijon mustard
1/2 tsp smoked paprika
1/4 tsp crushed red pepper flakes (optional)
Zest and juice of 1 lemon
1 tbsp fresh parsley, chopped
1 tbsp chives, chopped
1/2 cup grated Parmesan cheese
1/4 cup pasta water (reserved)
Instructions
- Cook linguine according to package directions. Reserve 1/4 cup pasta water and drain.
- Season diced chicken with salt and pepper. In a skillet over medium heat, cook chicken in olive oil until browned and cooked through. Remove and set aside.
- In the same skillet, melt butter. Add garlic, mustard, paprika, and red pepper flakes. Stir until fragrant.
- Stir in lemon zest and juice, then add parsley and chives.
- Return chicken to the skillet, add cooked linguine, and toss to coat.
- Add Parmesan cheese and reserved pasta water as needed to create a creamy sauce.
- Serve warm, garnished with extra herbs and Parmesan if desired.
Notes
Adjust red pepper flakes to control heat.
