Ingredients
- 1 ½ cups all-purpose flour
- ½ cup granulated sugar
- ¼ tsp salt
- ¾ cup unsalted butter (cold, cubed)
- 1 tsp vanilla extract
- 2 cups fresh or frozen cranberries
- ½ cup brown sugar
- 1 tbsp cornstarch
- 1 tbsp lemon juice
- ½ tsp cinnamon
- ½ cup rolled oats
Instructions
- Preheat oven to 350°F (175°C). Grease or line an 8x8 inch baking pan with parchment paper.
- In a large bowl, mix flour, granulated sugar, and salt. Cut in the cold butter until crumbly. Add vanilla extract.
- Press 2/3 of the crumb mixture into the bottom of the pan to form the crust. Bake for 12 minutes or until lightly golden.
- Meanwhile, in a saucepan, combine cranberries, brown sugar, cornstarch, lemon juice, and cinnamon. Cook over medium heat until the cranberries burst and thicken.
- Spread the cranberry mixture over the pre-baked crust.
- Add oats to the remaining crumble mixture, then sprinkle over the cranberry layer.
- Bake for 25-30 minutes until the top is golden and set. Let cool completely before slicing.
Notes
- Use frozen cranberries if fresh ones are unavailable.
- Substitute oats with chopped nuts for a crunchier topping.
