Description

Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • ¼ tsp salt
  • ¾ cup unsalted butter (cold, cubed)
  • 1 tsp vanilla extract
  • 2 cups fresh or frozen cranberries
  • ½ cup brown sugar
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • ½ tsp cinnamon
  • ½ cup rolled oats


Instructions

  • Preheat oven to 350°F (175°C). Grease or line an 8x8 inch baking pan with parchment paper.
  • In a large bowl, mix flour, granulated sugar, and salt. Cut in the cold butter until crumbly. Add vanilla extract.
  • Press 2/3 of the crumb mixture into the bottom of the pan to form the crust. Bake for 12 minutes or until lightly golden.
  • Meanwhile, in a saucepan, combine cranberries, brown sugar, cornstarch, lemon juice, and cinnamon. Cook over medium heat until the cranberries burst and thicken.
  • Spread the cranberry mixture over the pre-baked crust.
  • Add oats to the remaining crumble mixture, then sprinkle over the cranberry layer.
  • Bake for 25-30 minutes until the top is golden and set. Let cool completely before slicing.

Notes

  • Use frozen cranberries if fresh ones are unavailable.
  • Substitute oats with chopped nuts for a crunchier topping.
