This Creamy Chicken Carbonara recipe blends juicy chicken, crispy bacon, and a rich, creamy sauce with pasta for a quick, indulgent dinner.
Ingredients
- 12 oz spaghetti or fettuccine
- 2 tbsp olive oil
- 1 lb chicken breast, sliced into strips
- 6 slices bacon, chopped
- 3 garlic cloves, minced
- 2 large eggs
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 tsp black pepper
- 1/4 tsp salt
- Fresh parsley for garnish
Instructions
- Cook pasta according to package instructions. Reserve 1/2 cup pasta water, then drain and set aside.
- Heat olive oil in a skillet over medium heat. Add chicken, season with salt and pepper, and cook until golden and fully cooked. Remove and set aside.
- In the same skillet, cook chopped bacon until crispy. Remove bacon and drain excess grease, leaving about 1 tbsp in the skillet.
- Add garlic to the skillet and sauté for 1 minute until fragrant.
- In a small bowl, whisk together eggs, heavy cream, Parmesan cheese, and black pepper.
- Return pasta, chicken, and bacon to the skillet. Remove from heat, and slowly pour in the egg and cream mixture, tossing quickly to coat. Use reserved pasta water to loosen the sauce if needed.
- Garnish with fresh parsley and extra Parmesan before serving.
Notes
- Work quickly when adding the sauce to avoid scrambling the eggs.
- Substitute heavy cream with milk for a lighter version.
- Leftovers can be stored in the fridge for up to 3 days.
