Ingredients

  • 2 cups cooked chicken, shredded
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup carrots, diced
  • 1/2 cup celery, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon crushed red pepper (optional)
  • 1 pound potato gnocchi
  • 2 cups fresh spinach, chopped
  • 1/2 cup Parmesan cheese, grated

Instructions

  • Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, and celery. Sauté until softened.
  • Pour in chicken broth and bring to a simmer. Add Italian seasoning, salt, pepper, and red pepper flakes.
  • Stir in cooked chicken and gnocchi. Let it cook until gnocchi becomes tender.
  • Reduce heat to low and add heavy cream, spinach, and Parmesan cheese. Stir until combined.
  • Simmer for 5 more minutes, then remove from heat. Serve hot.
