Description

Ingredients

1 tbsp olive oil

1 lb chicken sausage, sliced

1 cup orzo pasta

3 cloves garlic, minced

1 small onion, diced

2 cups chicken broth

1/2 cup heavy cream

1/2 cup grated Parmesan cheese

1 cup spinach or kale (optional)

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)


Instructions

Heat olive oil in a large skillet over medium heat.

Add sliced chicken sausage and sauté until browned, about 4-5 minutes.

Stir in garlic and onion; cook until fragrant and translucent.

Add the orzo and stir to coat in the oil and sausage flavor.

Pour in the chicken broth and bring to a simmer. Cook for 8-10 minutes, stirring occasionally.

Once orzo is tender and most liquid is absorbed, reduce heat to low.

Stir in heavy cream and Parmesan cheese until smooth and creamy.

Fold in spinach or kale if using, and let wilt.

Season with salt and pepper to taste.

Garnish with chopped parsley and serve hot.

Notes

Use any pre-cooked chicken sausage flavor (garlic, herb, spicy, etc.).

Substitute kale or peas for spinach if desired.

Can be made ahead and stored in fridge up to 3 days.
