Ingredients
- 4 boneless, skinless chicken breasts
- 1 can (14 oz) coconut milk
- 2 tbsp olive oil
- 3 garlic cloves, minced
- 1 lime (zest and juice)
- 1 tsp ground ginger
- 1 tsp paprika
- 1 tsp salt
- ½ tsp black pepper
- Fresh cilantro, for garnish
Instructions
- Heat olive oil in a skillet over medium heat.
- Season chicken breasts with salt, pepper, paprika, and ginger.
- Cook chicken in the skillet for 5–7 minutes per side until golden and fully cooked. Remove and set aside.
- In the same skillet, sauté minced garlic for 1 minute.
- Add coconut milk, lime zest, and lime juice to the skillet. Stir and simmer for 5 minutes.
- Return chicken to the skillet, spoon the sauce over, and simmer for 2–3 minutes.
- Garnish with fresh cilantro and serve with rice or vegetables.
