This Creamy Coconut Lime Chicken recipe is a delightful blend of tender chicken, creamy coconut milk, and tangy lime for a savory, tropical-inspired meal.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 can (14 oz) coconut milk
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 lime (zest and juice)
  • 1 tsp ground ginger
  • 1 tsp paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • Fresh cilantro, for garnish

Instructions

  • Heat olive oil in a skillet over medium heat.
  • Season chicken breasts with salt, pepper, paprika, and ginger.
  • Cook chicken in the skillet for 5–7 minutes per side until golden and fully cooked. Remove and set aside.
  • In the same skillet, sauté minced garlic for 1 minute.
  • Add coconut milk, lime zest, and lime juice to the skillet. Stir and simmer for 5 minutes.
  • Return chicken to the skillet, spoon the sauce over, and simmer for 2–3 minutes.
  • Garnish with fresh cilantro and serve with rice or vegetables.
