Ingredients
- 1 lb Italian sausage (mild or spicy)
- 4 cups baby spinach
- 3 cups chicken broth
- 1 cup heavy cream
- 1 cup diced tomatoes (canned or fresh)
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 tsp Italian seasoning
- 1/2 tsp red pepper flakes (optional)
- 2 tbsp olive oil
- Salt and pepper, to taste
- Optional: Parmesan cheese for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add Italian sausage and cook until browned, breaking it up into small pieces. Remove and set aside.
- In the same pot, sauté onions and garlic until softened, about 3-4 minutes.
- Add diced tomatoes, Italian seasoning, red pepper flakes (if using), and chicken broth. Bring to a simmer and cook for 10 minutes.
- Stir in heavy cream and spinach, cooking until spinach is wilted and soup is heated through.
- Return the sausage to the pot and simmer for another 5 minutes. Season with salt and pepper.
- Serve hot, topped with Parmesan cheese if desired.

- For a lower-carb option, substitute spinach with kale or other leafy greens.
