Description

This creamy Italian sausage soup combines flavorful sausage, tender spinach, and a rich, creamy broth for a comforting and satisfying meal. Perfect for chilly evenings. 


Ingredients

  • 1 lb Italian sausage (mild or spicy)
  • 4 cups baby spinach
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 cup diced tomatoes (canned or fresh)
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes (optional)
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • Optional: Parmesan cheese for garnish


Instructions

  • Heat olive oil in a large pot over medium heat. Add Italian sausage and cook until browned, breaking it up into small pieces. Remove and set aside.
  • In the same pot, sauté onions and garlic until softened, about 3-4 minutes.
  • Add diced tomatoes, Italian seasoning, red pepper flakes (if using), and chicken broth. Bring to a simmer and cook for 10 minutes.
  • Stir in heavy cream and spinach, cooking until spinach is wilted and soup is heated through.
  • Return the sausage to the pot and simmer for another 5 minutes. Season with salt and pepper.
  • Serve hot, topped with Parmesan cheese if desired.
