- 1 lb ground beef
- 4 medium russet potatoes, peeled and diced

- 1 cup shredded cheddar cheese
- 2 tbsp unsalted butter
- 2 tbsp all-purpose flour

- 1/2 tsp paprika
- 1/2 tsp dried thyme

Instructions
- In a large pot, brown the ground beef over medium heat. Drain excess grease and set aside.
- In the same pot, melt butter over medium heat. Add diced onion and minced garlic, sauté until fragrant.
- Sprinkle flour over the onion mixture and stir, cooking for 1-2 minutes to form a roux.
- Slowly whisk in broth and milk, ensuring no lumps form.
- Add diced potatoes, salt, pepper, paprika, and thyme. Simmer for 15-20 minutes, or until potatoes are tender.
- Stir in heavy cream, cooked ground beef, and shredded cheddar cheese. Cook for another 5 minutes, stirring occasionally.
- Adjust seasoning to taste. Serve hot, garnished with green onions or parsley if desired.
