Ingredients

  • 12 oz pasta (penne or fettuccine)
  • 2 cups cooked chicken, shredded
  • 1 cup ricotta cheese
  • ½ cup grated Parmesan cheese
  • ½ cup heavy cream
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup pasta water (reserved)
  • ½ cup cherry tomatoes, halved (optional)
  • Fresh basil, for garnish

Instructions

  • Cook pasta according to package instructions; reserve ½ cup pasta water and drain the rest.
  • In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  • Add shredded chicken, Italian seasoning, salt, and pepper, stirring to combine.
  • Reduce heat to low and mix in ricotta cheese, Parmesan cheese, and heavy cream, stirring until smooth.
  • Add cooked pasta and a bit of reserved pasta water to thin the sauce to desired consistency.
  • Toss in cherry tomatoes (if using) and cook for 2 more minutes.
  • Remove from heat, garnish with fresh basil, and serve warm.
