Ingredients
- 12 oz pasta (penne or fettuccine)
- 2 cups cooked chicken, shredded
- 1 cup ricotta cheese
- ½ cup grated Parmesan cheese
- ½ cup heavy cream
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 tsp Italian seasoning
- ½ tsp salt
- ¼ tsp black pepper
- ½ cup pasta water (reserved)
- ½ cup cherry tomatoes, halved (optional)
- Fresh basil, for garnish
Instructions
- Cook pasta according to package instructions; reserve ½ cup pasta water and drain the rest.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
- Add shredded chicken, Italian seasoning, salt, and pepper, stirring to combine.
- Reduce heat to low and mix in ricotta cheese, Parmesan cheese, and heavy cream, stirring until smooth.
- Add cooked pasta and a bit of reserved pasta water to thin the sauce to desired consistency.
- Toss in cherry tomatoes (if using) and cook for 2 more minutes.
- Remove from heat, garnish with fresh basil, and serve warm.
