Ingredients
- 1 lb rigatoni pasta
- 1 lb Italian sausage (mild or spicy)
- 2 tbsp olive oil
- 1 small onion, finely chopped
- 3 garlic cloves, minced
- 1/2 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 cup marinara sauce
- 1/2 tsp red pepper flakes (optional)
- Salt and pepper to taste
- Fresh parsley or basil for garnish
Instructions
- Cook rigatoni according to package instructions. Reserve 1/2 cup pasta water, drain, and set aside.
- Heat olive oil in a large skillet over medium heat. Add sausage and cook until browned, breaking it into crumbles. Remove excess grease if needed.
- Add onion and garlic to the skillet and sauté until softened.
- Pour in chicken broth to deglaze the pan, then stir in marinara sauce and heavy cream.
- Simmer the sauce for 5 minutes. Add Parmesan cheese, red pepper flakes (if using), and stir until the cheese melts.
- Toss the cooked rigatoni into the sauce, adding reserved pasta water as needed to reach desired consistency.
- Garnish with fresh parsley or basil and serve warm.
