Ingredients

  • 1 lb rigatoni pasta
  • 1 lb Italian sausage (mild or spicy)
  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 3 garlic cloves, minced
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup marinara sauce
  • 1/2 tsp red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh parsley or basil for garnish

Instructions

  • Cook rigatoni according to package instructions. Reserve 1/2 cup pasta water, drain, and set aside.
  • Heat olive oil in a large skillet over medium heat. Add sausage and cook until browned, breaking it into crumbles. Remove excess grease if needed.
  • Add onion and garlic to the skillet and sauté until softened.
  • Pour in chicken broth to deglaze the pan, then stir in marinara sauce and heavy cream.
  • Simmer the sauce for 5 minutes. Add Parmesan cheese, red pepper flakes (if using), and stir until the cheese melts.
  • Toss the cooked rigatoni into the sauce, adding reserved pasta water as needed to reach desired consistency.
  • Garnish with fresh parsley or basil and serve warm.
