Ingredients

  1. 1 lb ground beef or turkey
  2. 1 onion, finely chopped
  3. 3 cloves garlic, minced
  4. 1 packet taco seasoning (or 2 tbsp homemade mix)
  5. 1 can (10 oz) diced tomatoes with green chilies
  6. 1 can (15 oz) black beans, drained and rinsed
  7. 1 can (15 oz) corn, drained
  8. 4 cups chicken or vegetable broth
  9. 1 cup heavy cream or half & half
  10. 1 cup cheddar cheese, shredded
  11. Salt and pepper, to taste
  12. Optional toppings: sour cream, sliced jalapenos, diced avocado, chopped cilantro, tortilla strips

Instructions

  1. Cook Beef: In a large pot over medium heat, brown the ground beef or turkey. Break the meat into small pieces as it cooks. Once browned, drain any excess fat.
  2. Sauté Vegetables: Add the chopped onion to the pot and sauté until translucent. Add in the minced garlic and cook for another minute until fragrant.
  3. Add Ingredients: Stir in the taco seasoning, followed by the diced tomatoes, black beans, corn, and chicken or vegetable broth. Mix well.
  4. Simmer: Bring the soup to a boil, then reduce heat and let it simmer for about 20-25 minutes.
  5. Make It Creamy: Stir in the heavy cream or half & half and let the soup heat through. Add the shredded cheddar cheese and stir until melted and the soup is creamy.
