Ingredients
- 1 lb ground beef or turkey
- 1 onion, finely chopped

- 1 can (10 oz) diced tomatoes with green chilies
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 4 cups chicken or vegetable broth
- 1 cup heavy cream or half & half
- 1 cup cheddar cheese, shredded
- Salt and pepper, to taste
- Optional toppings: sour cream, sliced jalapenos, diced avocado, chopped cilantro, tortilla strips
Instructions
- Cook Beef: In a large pot over medium heat, brown the ground beef or turkey. Break the meat into small pieces as it cooks. Once browned, drain any excess fat.
- Sauté Vegetables: Add the chopped onion to the pot and sauté until translucent. Add in the minced garlic and cook for another minute until fragrant.
- Add Ingredients: Stir in the taco seasoning, followed by the diced tomatoes, black beans, corn, and chicken or vegetable broth. Mix well.
