Ingredients
- 2 boneless, skinless chicken breasts
- 1 cup breadcrumbs
- ½ cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp paprika
- 1 egg, beaten
- 2 tbsp olive oil
- 8 oz pasta (fettuccine or penne)
- 1 tbsp butter
- 2 cloves garlic, minced
- 1 cup heavy cream
- ½ cup chicken broth
- ½ cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Prepare the Chicken: Flatten chicken breasts, then season with salt and pepper.
- Mix breadcrumbs, Parmesan, garlic powder, and paprika in a bowl.
- Dip chicken in beaten egg, then coat in breadcrumb mixture.
- Heat olive oil in a pan and cook chicken for 4-5 minutes per side until golden and cooked through. Set aside.
- Cook the Pasta: Boil pasta according to package instructions. Drain and set aside.
- Make the Sauce: In the same pan, melt butter and sauté garlic until fragrant.
- Add heavy cream and chicken broth, simmer for 3 minutes.
- Stir in Parmesan cheese, then season with salt and pepper.
- Add cooked pasta to the sauce and toss to coat.
- Slice the crispy chicken and serve over the creamy pasta. Garnish with parsley.
