Ingredients
- 2 boneless, skinless chicken breasts
- 4 cups chicken broth
- 1 (14.5 oz) can diced tomatoes

- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional)
- 1 cup heavy cream
- 1 cup shredded Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1 1/2 cups cooked pasta (penne or rotini)
- Fresh basil or parsley for garnish
Instructions
- Add chicken breasts, chicken broth, diced tomatoes, tomato sauce, Italian seasoning, garlic powder, onion powder, salt, black pepper, and red pepper flakes to the crock pot.
- Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is tender.
- Remove the chicken, shred it with two forks, and return it to the crock pot.
- Stir in heavy cream, Parmesan cheese, mozzarella cheese, and cooked pasta. Cook for an additional 15-20 minutes on low until the cheese is melted and the soup is creamy.
- Serve hot, garnished with fresh basil or parsley.
