Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 cup chicken broth
  • 2 cups shredded cheddar cheese
  • 1 onion, diced
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • Place the chicken breasts in the bottom of the crockpot.
  • Sprinkle with salt, pepper, and garlic powder.
  • Add the diced onion, cream of chicken soup, cream of mushroom soup, and chicken broth.
  • Stir in the rice until well combined.
  • Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and the rice is tender.
  • About 30 minutes before serving, sprinkle shredded cheddar cheese over the top. Cover and let the cheese melt.
  • Garnish with fresh parsley before serving.

  • For extra veggies, add a cup of frozen peas or mixed vegetables in the last hour of cooking.
