Ingredients
- 1 lb Italian sausage (mild or spicy)
- 4 cups chicken broth
- 1 (14 oz) can diced tomatoes (with juices)
- 1 (8 oz) can tomato sauce
- 1 cup heavy cream
- 2 cups fresh spinach (optional)
- 1 (20 oz) package refrigerated cheese tortellini
- 1 medium onion, diced
- 3 garlic cloves, minced
- 1 tsp dried basil
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Brown the sausage in a skillet over medium heat, breaking it into crumbles. Drain any excess grease.
- Add the cooked sausage, chicken broth, diced tomatoes, tomato sauce, onion, garlic, basil, and oregano to the Crockpot. Stir to combine.
- Cook on low for 6-7 hours or on high for 3-4 hours.
- About 30 minutes before serving, stir in the heavy cream, spinach (if using), and tortellini.
- Cook for an additional 20-30 minutes until the tortellini is tender.
- Season with salt and pepper to taste. Serve hot and enjoy!
