Ingredients

  • 1 lb Italian sausage (mild or spicy)
  • 4 cups chicken broth
  • 1 (14 oz) can diced tomatoes (with juices)
  • 1 (8 oz) can tomato sauce
  • 1 cup heavy cream
  • 2 cups fresh spinach (optional)
  • 1 (20 oz) package refrigerated cheese tortellini
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste


Instructions

  1. Brown the sausage in a skillet over medium heat, breaking it into crumbles. Drain any excess grease.
  2. Add the cooked sausage, chicken broth, diced tomatoes, tomato sauce, onion, garlic, basil, and oregano to the Crockpot. Stir to combine.
  3. Cook on low for 6-7 hours or on high for 3-4 hours.
  4. About 30 minutes before serving, stir in the heavy cream, spinach (if using), and tortellini.
  5. Cook for an additional 20-30 minutes until the tortellini is tender.
