Marinated in a blend of apricot jam, curry powder, and spices, these skewers feature tender chicken pieces and dried apricots for a sweet and savory flavor. Ingredients
- 2 lbs chicken thighs, cut into bite-sized pieces
- 1 cup apricot jam
- 1/2 cup white vinegar
- 2 tbsp curry powder
- 1 tbsp ground coriander
- 1 tbsp ground cumin
- 1 tbsp turmeric
- 1 large onion, finely chopped
- 3 garlic cloves, minced
- 1/2 cup dried apricots, halved
- Salt and pepper to taste

Instructions
- In a large bowl, combine apricot jam, white vinegar, curry powder, ground coriander, ground cumin, turmeric, onion, garlic, salt, and pepper. Mix well to form the marinade.
- Add chicken pieces to the marinade and toss to coat thoroughly. Cover and refrigerate for at least 2 hours, preferably overnight.
- Soak skewers in water for 30 minutes if using wooden ones.
- Preheat the grill to medium-high heat.
- Thread chicken pieces and dried apricot halves onto the skewers alternately.
- Grill the sosaties for 10-15 minutes, turning occasionally, until the chicken is cooked through and slightly charred.
- Serve hot with your choice of side dishes.
Notes
- For a spicier version, add a pinch of chili flakes to the marinade.
- If using metal skewers, soaking is not necessary.
