Ingredients

  • 1 cup dried apricots, chopped
  • 1 cup boiling water
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream

Instructions

  • Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  • Place chopped apricots in a bowl and pour boiling water over them. Let soak for 10 minutes, then drain.
  • In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  • In a large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, alternating with sour cream, beginning and ending with the dry ingredients. Fold in the drained apricots.
  • Pour batter into the prepared cake pan and smooth the top.
  • Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • Fresh apricots can be used instead of dried apricots. Adjust the soaking step accordingly.
  • Serve with a dusting of powdered sugar or a dollop of whipped cream for extra indulgence.
