Description
Warm up with this creamy and hearty Demos chicken and rice soup recipe, inspired by Demos' Restaurant's iconic dish. Packed with tender chicken, fluffy rice, and a medley of herbs and spices, it's comfort in a bowl.
Ingredients
- 2 chicken breasts, boneless and skinless
- 6 cups chicken broth
- 1 cup white rice, uncooked
- 1 onion, diced
- 2 celery stalks, diced
- 2 carrots, diced
- 4 garlic cloves, minced
- 2 bay leaves
- 1 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
- 1/4 cup fresh parsley, chopped
- 1 cup heavy cream or half and half
- 2 tablespoons olive oil or butter
- Optional: grated Parmesan cheese for garnish
Instructions
- In a large pot, heat the olive oil or butter over medium heat. Add the diced onions, celery, and carrots, and sauté until the vegetables are softened and the onions are translucent, about 5 minutes.
- Stir in the minced garlic and sauté for another minute.
- Add the chicken breasts, chicken broth, bay leaves, dried thyme, dried oregano, salt, and pepper to the pot. Bring the mixture to a boil.
- Once boiling, reduce the heat to low and let it simmer until the chicken breasts are cooked through, about 20-25 minutes.
- Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot.
- Add the uncooked rice to the pot and simmer until the rice is tender, about 15-20 minutes.
- Stir in the heavy cream or half and half and let the soup simmer for an additional 5 minutes, or until heated through.
- Remove the bay leaves and stir in the chopped parsley.
- Taste and adjust seasoning if necessary.
- Serve hot, garnished with grated Parmesan cheese if desired.
Notes
- For a thicker soup, you can use a slurry of 2 tablespoons of cornstarch mixed with 2 tablespoons of water, added to the soup before the cream.
- For added flavor, consider using a rotisserie chicken instead of raw chicken breasts.
