Ingredients
- 4 bone-in, skin-on chicken quarters
- 1 cup red wine vinegar
- 1/2 cup vegetable oil or olive oil
- 2 tablespoons paprika
- 1 tablespoon garlic powder
- 1 tablespoon oregano
- 1 teaspoon salt
- 1 teaspoon pepper
- 1/2 teaspoon cayenne pepper (optional for heat)
Instructions
- In a large bowl, combine the red wine vinegar, oil, paprika, garlic powder, oregano, salt, pepper, and cayenne (if using). Mix well.
- Submerge the chicken quarters in the marinade. Ensure each piece is well coated.
- Cover the bowl and refrigerate for at least 4 hours, preferably overnight.
- Preheat your grill to medium-high heat.
- Remove the chicken from the marinade, allowing any excess to drip off.
- Grill the chicken quarters, skin side down, for about 5-7 minutes until the skin is crisp and slightly charred.
- Turn the chicken and continue grilling for another 20-25 minutes, or until fully cooked through and the internal temperature reaches 165°F (74°C).
- Remove from grill and let rest for a few minutes before serving.
