Description

Ingredients

  • 4 bone-in, skin-on chicken quarters
  • 1 cup red wine vinegar
  • 1/2 cup vegetable oil or olive oil
  • 2 tablespoons paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon oregano
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/2 teaspoon cayenne pepper (optional for heat)

Instructions

  1. In a large bowl, combine the red wine vinegar, oil, paprika, garlic powder, oregano, salt, pepper, and cayenne (if using). Mix well.
  2. Submerge the chicken quarters in the marinade. Ensure each piece is well coated.
  3. Cover the bowl and refrigerate for at least 4 hours, preferably overnight.
  4. Preheat your grill to medium-high heat.
  5. Remove the chicken from the marinade, allowing any excess to drip off.
  6. Grill the chicken quarters, skin side down, for about 5-7 minutes until the skin is crisp and slightly charred.
  7. Turn the chicken and continue grilling for another 20-25 minutes, or until fully cooked through and the internal temperature reaches 165°F (74°C).
  8. Remove from grill and let rest for a few minutes before serving.
