Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 2 cups beef broth
  • 2 cups elbow macaroni
  • 1 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper, to taste
  • 1 cup shredded cheddar cheese
  • Optional toppings: sour cream, green onions, jalapeños

Instructions

  • In a large pot, cook the ground beef over medium heat until browned. Drain excess fat.
  • Add diced onion and garlic to the pot, cooking until softened.
  • Stir in chili powder, cumin, salt, and pepper.
  • Add kidney beans, diced tomatoes, tomato sauce, and beef broth. Bring to a simmer.
  • Stir in the macaroni and cook, uncovered, until the pasta is tender, about 10 minutes.
  • Remove from heat and stir in shredded cheddar cheese until melted.
