Ingredients

  • 2 lbs ground beef
  • 1 small onion, finely chopped
  • 1/2 cup green bell pepper, finely chopped
  • 1 1/2 cups crushed Ritz crackers
  • 3 large eggs
  • 1/2 cup milk
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup ketchup
  • 1/4 cup brown sugar
  • 1 tsp yellow mustard

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine ground beef, onion, bell pepper, Ritz crackers, eggs, milk, salt, and black pepper. Mix until just combined.
  3. Shape the mixture into a loaf and place it in a greased loaf pan or on a lined baking sheet.
  4. In a small bowl, mix ketchup, brown sugar, and mustard. Spread the glaze evenly over the top of the meatloaf.
  5. Bake in the preheated oven for 60-70 minutes or until the internal temperature reaches 160°F (70°C).
  6. Remove from the oven and let the meatloaf rest for 10 minutes before slicing.
