Ingredients
- 2 lbs ground beef
- 1 small onion, finely chopped
- 1/2 cup green bell pepper, finely chopped
- 1 1/2 cups crushed Ritz crackers
- 3 large eggs
- 1/2 cup milk
- 1 tsp salt
- 1/4 tsp black pepper
- 1/4 cup ketchup
- 1/4 cup brown sugar
- 1 tsp yellow mustard
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine ground beef, onion, bell pepper, Ritz crackers, eggs, milk, salt, and black pepper. Mix until just combined.
- Shape the mixture into a loaf and place it in a greased loaf pan or on a lined baking sheet.
- In a small bowl, mix ketchup, brown sugar, and mustard. Spread the glaze evenly over the top of the meatloaf.
- Bake in the preheated oven for 60-70 minutes or until the internal temperature reaches 160°F (70°C).
- Remove from the oven and let the meatloaf rest for 10 minutes before slicing.
