Ingredients
- 1 lb ground beef
- 1 packet taco seasoning
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies (e.g., Rotel)
- 1 cup shredded cheddar cheese
- 1 box (8.5 oz) cornbread mix
- 1 egg (for cornbread mix)
- 1/3 cup milk (for cornbread mix)
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, cook ground beef until browned. Drain excess grease.
- Stir in taco seasoning, black beans, corn, and diced tomatoes. Simmer for 5 minutes.
- Pour the beef mixture into a greased 9x13-inch baking dish.
- Sprinkle shredded cheddar cheese evenly over the mixture.
- Prepare the cornbread batter according to package instructions (mix cornbread mix, egg, and milk).
- Pour cornbread batter over the beef mixture, spreading evenly.
- Bake for 25-30 minutes or until the cornbread is golden brown and cooked through.
- Let cool for 5 minutes before serving.
