Description

This Easy Mexican Casserole is a hearty and satisfying dish that brings the vibrant flavors of Mexico to your dinner table. It's perfect for a comforting weeknight meal and sure to be a hit with the whole family.


Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cups salsa
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 package (1.25 oz) taco seasoning
  • 2 cups shredded cheddar cheese
  • 1 cup crushed tortilla chips

Instructions

  1. Preheat oven to 350°F.
  2. In a skillet, cook ground beef and onion until beef is browned and onions are soft.
  3. Stir in salsa, black beans, corn, and taco seasoning. Simmer for 5 minutes.
  4. In a 9x13 inch baking dish, layer half the beef mixture, followed by half the cheese. Repeat layers.
  5. Top with crushed tortilla chips.
  6. Bake for 20-25 minutes or until cheese is bubbly and golden.
