Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (8 oz) tomato sauce
  • 1 cup beef broth
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  • In a skillet, heat olive oil over medium heat. Add diced onions and cook until softened.
  • Add minced garlic and cook for 1 minute until fragrant.
  • Add ground beef to the skillet, cooking until browned and crumbled. Drain excess fat.
  • Transfer the beef mixture to the slow cooker.
  • Add chili powder, cumin, smoked paprika, cayenne pepper, salt, and pepper to the slow cooker.
  • Stir in diced tomatoes, tomato sauce, beef broth, kidney beans, and black beans.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  • Adjust seasoning before serving. Serve hot with your favorite toppings.

Notes

  • For thicker chili, uncover the slow cooker for the last hour of cooking.
  • You can make this chili spicier by increasing the cayenne or adding fresh chili peppers.
