Ingredients
- 12 lasagna noodles
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 2 cups fresh spinach, chopped
- 3 cups marinara sauce
- 1 egg
- 1/4 cup fresh basil, chopped (optional)
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook lasagna noodles according to package instructions. Drain and set aside.
- In a mixing bowl, combine ricotta cheese, chopped spinach, egg, half of the Parmesan cheese, salt, and pepper.
- Spread a thin layer of marinara sauce on the bottom of a baking dish.
- Place a layer of lasagna noodles over the sauce.
- Spread the ricotta and spinach mixture over the noodles, then sprinkle with mozzarella and Parmesan.
- Repeat the layers, finishing with a layer of noodles topped with marinara sauce and the remaining mozzarella and Parmesan.
- Cover with foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes, until the cheese is golden and bubbly.
- Let the lasagna rest for 10 minutes before serving. Garnish with fresh basil if desired.

- For added flavor, mix in some sautéed garlic and onions with the spinach.
- Substitute whole wheat noodles for a healthier option.
