Description

Ingredients

  • 1 lb ground beef
  • 1 packet (1 oz) taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 can (8 oz) corn, drained
  • 2 cups shredded cheddar cheese
  • 4 cups Fritos corn chips
  • 1/2 cup sour cream
  • 1/4 cup sliced black olives (optional)
  • 2 tbsp chopped cilantro (optional)
  • Salt and pepper, to taste
  • Optional toppings: sour cream, salsa, avocado, jalapeños

Instructions

  • Preheat oven to 350°F (175°C).
  • In a large skillet, brown the ground beef over medium heat. Drain excess fat.
  • Stir in taco seasoning, black beans, diced tomatoes with green chilies, and corn. Simmer for 5 minutes until heated through.
  • Spread half of the Fritos in the bottom of a 9x13-inch casserole dish.
  • Pour the beef mixture over the Fritos, spreading it evenly. Top with shredded cheddar cheese.
  • Bake for 15 minutes, until the cheese is melted and bubbly.
  • Remove from the oven and top with the remaining Fritos. Garnish with optional toppings like sour cream, sliced olives, and cilantro.
  • Serve hot with additional toppings like salsa or avocado.
