Ingredients
- 1 can black beans, drained and rinsed
- 1 can kidney beans, drained and rinsed
- 1 can pinto beans, drained and rinsed
- 1 can diced tomatoes (with juices)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tbsp chili powder
- 1 tsp cumin
- 1/2 tsp smoked paprika
- 1/2 tsp oregano
- 1/4 tsp cayenne pepper (optional)
- 2 cups vegetable broth
- 1 tbsp olive oil
- Salt and pepper to taste
- Fresh cilantro, for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and garlic; sauté until softened, about 3-4 minutes.
- Stir in chili powder, cumin, smoked paprika, oregano, and cayenne pepper; cook for 1 minute until fragrant.
- Add the black beans, kidney beans, pinto beans, and diced tomatoes (with juices). Pour in the vegetable broth and bring to a simmer.
- Reduce heat and cook for 20 minutes, stirring occasionally. Season with salt and pepper to taste.
- Serve hot, garnished with fresh cilantro.
Notes
For a thicker chili, simmer uncovered for an additional 10 minutes. This chili is also great for meal prep and tastes even better the next day.
