This easy three bean chili is a flavorful, hearty dish made with a trio of beans, tomatoes, and spices. Ideal for busy weeknights, this vegetarian chili is ready in just 30 minutes, delivering a satisfying and comforting meal that’s perfect for the whole family.


Ingredients

  • 1 can black beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 can pinto beans, drained and rinsed
  • 1 can diced tomatoes (with juices)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp oregano
  • 1/4 tsp cayenne pepper (optional)
  • 2 cups vegetable broth
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  • Heat olive oil in a large pot over medium heat. Add diced onion and garlic; sauté until softened, about 3-4 minutes.
  • Stir in chili powder, cumin, smoked paprika, oregano, and cayenne pepper; cook for 1 minute until fragrant.
  • Add the black beans, kidney beans, pinto beans, and diced tomatoes (with juices). Pour in the vegetable broth and bring to a simmer.
  • Reduce heat and cook for 20 minutes, stirring occasionally. Season with salt and pepper to taste.
  • Serve hot, garnished with fresh cilantro.

Notes

 

For a thicker chili, simmer uncovered for an additional 10 minutes. This chili is also great for meal prep and tastes even better the next day.
