Ingredients

  • 1 lb ground turkey
  • 1 can kidney beans, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes (with juices)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp oregano
  • 1/4 tsp cayenne pepper (optional)
  • 2 cups chicken broth
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh cilantro, for garnish
  • Shredded cheese, for serving (optional)

Instructions

  • Heat olive oil in a large pot over medium heat. Add diced onion and garlic; sauté until softened, about 3-4 minutes.
  • Add the ground turkey and cook until browned, breaking it up with a spoon as it cooks, about 5-7 minutes.
  • Stir in chili powder, cumin, smoked paprika, oregano, and cayenne pepper (if using); cook for 1 minute until fragrant.
  • Add kidney beans, black beans, diced tomatoes (with juices), and chicken broth. Bring to a simmer.
  • Reduce heat and cook for 15-20 minutes, stirring occasionally. Season with salt and pepper to taste.
  • Serve hot, garnished with fresh cilantro and optional shredded cheese.

Notes
