Ingredients
- 12 oz pasta (penne or rotini)
- 1 lb ground beef
- 1 can (10 oz) red enchilada sauce
- 1 can (14 oz) diced tomatoes
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1 small onion, diced
- 1 clove garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp paprika
- Salt and pepper to taste
- Fresh cilantro (optional for garnish)
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
- Add diced onion and garlic to the beef, sautéing until soft.
- Stir in enchilada sauce, diced tomatoes, cumin, chili powder, paprika, salt, and pepper.
- Simmer the mixture for 5 minutes, then fold in the cooked pasta.
- Stir in sour cream and shredded cheese until well combined and creamy.
- Serve hot, garnished with fresh cilantro if desired.
