Ingredients

  • 12 oz pasta (penne or rotini)
  • 1 lb ground beef
  • 1 can (10 oz) red enchilada sauce
  • 1 can (14 oz) diced tomatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 small onion, diced
  • 1 clove garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • Fresh cilantro (optional for garnish)

Instructions

  • Cook pasta according to package instructions. Drain and set aside.
  • In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
  • Add diced onion and garlic to the beef, sautéing until soft.
  • Stir in enchilada sauce, diced tomatoes, cumin, chili powder, paprika, salt, and pepper.
  • Simmer the mixture for 5 minutes, then fold in the cooked pasta.
  • Stir in sour cream and shredded cheese until well combined and creamy.
