Ingredients

  • 4 boneless, skinless chicken thighs
  • 1 lb baby potatoes, halved
  • 4 tbsp unsalted butter
  • 4 garlic cloves, minced
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • 1 tbsp olive oil
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  • Season chicken thighs with garlic powder, paprika, Italian seasoning, salt, and pepper.
  • Heat olive oil and 2 tablespoons of butter in a large skillet over medium heat. Add chicken thighs and cook for 6-7 minutes per side, until golden and cooked through. Remove from skillet and set aside.
  • In the same skillet, add the halved baby potatoes and season with salt and pepper. Cook for 5-6 minutes, stirring occasionally, until golden and tender.
  • Add the remaining butter and minced garlic to the skillet. Stir and cook for 1-2 minutes, until fragrant.
  • Return the chicken thighs to the skillet and spoon the garlic butter over the chicken and potatoes.
  • Garnish with fresh parsley and serve immediately.
