Ingredients
- 4 boneless, skinless chicken thighs
- 1 lb baby potatoes, halved
- 4 tbsp unsalted butter
- 4 garlic cloves, minced
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp Italian seasoning
- Salt and pepper, to taste
- 1 tbsp olive oil
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Season chicken thighs with garlic powder, paprika, Italian seasoning, salt, and pepper.
- Heat olive oil and 2 tablespoons of butter in a large skillet over medium heat. Add chicken thighs and cook for 6-7 minutes per side, until golden and cooked through. Remove from skillet and set aside.
- In the same skillet, add the halved baby potatoes and season with salt and pepper. Cook for 5-6 minutes, stirring occasionally, until golden and tender.
- Add the remaining butter and minced garlic to the skillet. Stir and cook for 1-2 minutes, until fragrant.
- Return the chicken thighs to the skillet and spoon the garlic butter over the chicken and potatoes.
- Garnish with fresh parsley and serve immediately.
