Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 lb baby potatoes, halved
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken breasts with Italian seasoning, paprika, salt, and pepper. Sear the chicken for 4–5 minutes per side until golden. Remove from skillet.
  3. In the same skillet, add potatoes, season with salt and pepper, and cook for 10 minutes, stirring occasionally, until crispy and tender.
  4. Add minced garlic and cook for 1 minute until fragrant.
  5. Return chicken to the skillet, sprinkle Parmesan cheese over chicken and potatoes, and cover for 5 minutes to let the flavors meld.
  6. Garnish with fresh parsley before serving.
