Ingredients

  • 2 cups cooked chicken, shredded or diced

Instructions

  • Preheat the oven to 350°F (175°C).
  • Cook the pasta according to package instructions until al dente. Drain and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
  • Add the butter to the skillet, let it melt, and then whisk in the flour. Cook the roux for 1 minute, stirring constantly.
  • Gradually whisk in the milk and chicken broth, and cook until the sauce thickens, about 3-4 minutes.
  • Stir in 1 cup of Parmesan cheese, Italian seasoning, salt, and pepper. Stir until the cheese is melted and the sauce is smooth.
  • In a large bowl, combine the cooked pasta, shredded chicken, and cheese sauce. Mix well.
  • Transfer the mixture to a greased 9x13 inch baking dish. Top with the remaining 1/2 cup of Parmesan cheese, mozzarella cheese, and panko breadcrumbs if using.
  • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and the top is golden brown.
