Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup grated Parmesan cheese
  • 1/3 cup breadcrumbs (panko or regular)
  • 1 tsp garlic powder
  • 1 tsp dried parsley
  • 1/2 tsp paprika
  • Salt and pepper, to taste
  • 1/4 cup all-purpose flour
  • 1 egg, beaten
  • 2 tbsp olive oil (for pan-frying) or cooking spray (for baking)
  • Optional: Fresh parsley and lemon wedges for garnish

Instructions

  • Prepare Chicken: Pound chicken breasts to an even thickness, about 1/2 inch, for even cooking. Season both sides with salt and pepper.
  • Set Up Coating Stations:
    • Place flour in one shallow dish.
    • Beat egg in a second shallow dish.
    • In a third shallow dish, mix Parmesan cheese, breadcrumbs, garlic powder, parsley, and paprika.
  • Coat Chicken: Dredge each chicken breast in flour, dip in the beaten egg, and then press into the Parmesan mixture, coating evenly.
  • Cooking Options:
    • Pan-Frying: Heat olive oil in a large skillet over medium heat. Cook chicken breasts for 4-5 minutes per side until golden brown and cooked through (internal temperature of 165°F).
    • Baking: Preheat oven to 400°F (200°C). Place coated chicken on a greased baking sheet. Spray lightly with cooking spray and bake for 20-25 minutes, flipping halfway through.
  • Serve: Garnish with fresh parsley and serve hot with your favorite side dishes.

Notes

  • Use freshly grated Parmesan for the best flavor.
  • Add a pinch of red pepper flakes to the Parmesan mixture for a spicy kick.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat in the oven for crispiness.
