Ingredients
For the Pork Chops:
- 4 boneless pork chops
- 1/2 cup grated parmesan cheese
- 2 tsp garlic powder
- 1 tsp paprika
- Salt and pepper to taste
- 1 tbsp olive oil
For the Cheesy Scalloped Potatoes:
- 4 large potatoes, thinly sliced
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 1 1/2 cups milk
- 1 cup shredded cheddar cheese
- 1/4 cup grated parmesan cheese
- 1/2 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
- Prepare the Pork Chops: In a small bowl, mix parmesan, garlic powder, paprika, salt, and pepper. Rub this mixture over both sides of the pork chops.
- Heat olive oil in a skillet over medium heat and sear pork chops for 2-3 minutes per side until browned. Set aside.
- Make the Scalloped Potatoes: In a saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute. Gradually whisk in milk, cooking until thickened. Stir in cheddar cheese, parmesan, garlic powder, salt, and pepper until the cheese is melted and the sauce is smooth.
- Layer the sliced potatoes in the prepared baking dish. Pour the cheese sauce evenly over the potatoes.
- Place the seared pork chops on top of the potatoes.
- Cover the dish with foil and bake for 35-40 minutes, or until the potatoes are tender and pork chops reach an internal temperature of 145°F.
- Remove the foil and bake for an additional 5-10 minutes to brown the top. Serve hot.

- For a crispier finish on the pork chops, broil the dish for the last 2 minutes.
- Yukon Gold or Russet potatoes work best for this recipe.
