Description

This Gluten Free Lasagna Soup recipe delivers all the comforting flavors of traditional lasagna in a gluten-free, one-pot soup. It's rich, cheesy, and easy to make for a wholesome family meal.


Ingredients

1 lb ground beef or Italian sausage

1 tbsp olive oil

1 small onion, diced

3 cloves garlic, minced

4 cups gluten free chicken or vegetable broth

1 can (28 oz) crushed tomatoes

2 tbsp tomato paste

1 tsp dried basil

1 tsp dried oregano

½ tsp crushed red pepper flakes (optional)

Salt and pepper to taste

8 oz gluten free lasagna noodles, broken into pieces

½ cup ricotta cheese

1 cup shredded mozzarella cheese

¼ cup grated Parmesan cheese

Fresh basil or parsley for garnish


Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions and cook until soft.
  2. Stir in garlic and cook until fragrant.
  3. Add ground beef and cook until browned. Drain excess fat.
  4. Stir in crushed tomatoes, tomato paste, broth, and seasonings. Bring to a boil.
  5. Add broken lasagna noodles and reduce to a simmer. Cook until noodles are tender (about 10-12 minutes).
  6. Stir in ricotta, mozzarella, and Parmesan until melted and creamy.
  7. Garnish with fresh herbs and serve hot.

Notes

Substitute meat with plant-based protein for a vegetarian option.

Add spinach or zucchini for extra veggies.
