Ingredients
1 lb ground beef or Italian sausage
1 tbsp olive oil
1 small onion, diced
3 cloves garlic, minced
4 cups gluten free chicken or vegetable broth
1 can (28 oz) crushed tomatoes
2 tbsp tomato paste
1 tsp dried basil
1 tsp dried oregano
½ tsp crushed red pepper flakes (optional)
Salt and pepper to taste
8 oz gluten free lasagna noodles, broken into pieces
½ cup ricotta cheese
1 cup shredded mozzarella cheese
¼ cup grated Parmesan cheese
Fresh basil or parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add onions and cook until soft.
- Stir in garlic and cook until fragrant.
- Add ground beef and cook until browned. Drain excess fat.
- Stir in crushed tomatoes, tomato paste, broth, and seasonings. Bring to a boil.
- Add broken lasagna noodles and reduce to a simmer. Cook until noodles are tender (about 10-12 minutes).
- Stir in ricotta, mozzarella, and Parmesan until melted and creamy.
- Garnish with fresh herbs and serve hot.
Notes
