Ingredients

1 lb ground chicken

1/4 cup finely chopped red onion

2 cloves garlic, minced

1/4 cup fresh parsley, chopped

1 tsp dried oregano

1/2 tsp salt

1/4 tsp black pepper

1 tbsp lemon juice

1/3 cup crumbled feta cheese

1/4 cup breadcrumbs (or almond flour for gluten-free)

1 egg

Olive oil for cooking


Instructions

Preheat oven to 400°F (200°C) or heat a skillet over medium heat with olive oil.

In a bowl, mix ground chicken, red onion, garlic, parsley, oregano, salt, pepper, lemon juice, feta, breadcrumbs, and egg.

Form into 1.5-inch meatballs using damp hands or a scoop.

Bake for 15–18 minutes or cook in the skillet until golden and cooked through (about 8–10 minutes).

Serve warm with tzatziki, pita, rice, or salad.

Notes
