Description

This Green Goddess Salad is a vibrant, fresh, and herbaceous dish that combines crunchy vegetables with a creamy, tangy, and flavorful green goddess dressing. The dressing features fresh herbs, Greek yogurt or mayo, lemon juice, and garlic for that classic, bold flavor.


Ingredients

1 small head of green cabbage, finely chopped

1 large cucumber, diced

4 green onions, chopped

1 cup fresh parsley

1/2 cup fresh basil

2 cloves garlic

1/4 cup lemon juice

1/4 cup olive oil

1/4 cup mayonnaise or Greek yogurt

2 tablespoons rice vinegar

Salt and pepper to taste

Optional: avocado, spinach, or grilled chicken for extra protein


Instructions

Prepare the vegetables: Chop the cabbage, cucumber, and green onions finely. Combine in a large bowl.

Make the dressing: In a blender, combine parsley, basil, garlic, lemon juice, olive oil, mayo or Greek yogurt, rice vinegar, salt, and pepper. Blend until smooth.

Toss the salad: Pour the green goddess dressing over the chopped vegetables and toss until evenly coated.

Chill and serve: Let it chill for at least 10–15 minutes for the flavors to meld. Serve cold.
