Ingredients

  • 1 lb ground beef
  • 12 oz pasta (penne or elbow macaroni)
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (10 oz) tomato sauce
  • 1 small onion, chopped
  • 2 cups shredded cheddar cheese
  • 1 cup frozen mixed vegetables
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • ½ cup breadcrumbs (optional, for topping)

Instructions

  • Preheat oven to 350°F (175°C).
  • Cook pasta according to package instructions, then drain.
  • In a skillet, cook ground beef and onion over medium heat until beef is browned. Drain excess fat.
  • Stir in diced tomatoes, tomato sauce, garlic powder, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
  • In a large bowl, combine cooked pasta, beef mixture, vegetables, and 1 cup of cheddar cheese.
  • Transfer to a greased 9x13-inch baking dish. Sprinkle the remaining cheese on top. Add breadcrumbs, if using.
  • Bake for 20-25 minutes until the cheese is melted and bubbly. Let cool slightly before serving.
