Ingredients
- 1 lb ground beef
- 12 oz pasta (penne or elbow macaroni)
- 1 can (14.5 oz) diced tomatoes
- 1 can (10 oz) tomato sauce
- 1 small onion, chopped
- 2 cups shredded cheddar cheese
- 1 cup frozen mixed vegetables
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- Salt and pepper, to taste
- ½ cup breadcrumbs (optional, for topping)
Instructions
- Preheat oven to 350°F (175°C).
- Cook pasta according to package instructions, then drain.
- In a skillet, cook ground beef and onion over medium heat until beef is browned. Drain excess fat.
- Stir in diced tomatoes, tomato sauce, garlic powder, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
- In a large bowl, combine cooked pasta, beef mixture, vegetables, and 1 cup of cheddar cheese.
- Transfer to a greased 9x13-inch baking dish. Sprinkle the remaining cheese on top. Add breadcrumbs, if using.
- Bake for 20-25 minutes until the cheese is melted and bubbly. Let cool slightly before serving.
